Recipe Challenge #7 – Jammie Choc Nibble Mousse

It’s the finale of #NationalChocolateWeek and what a #SweetSunday it is! A perfect pud post Sunday lunch . . Jammie Choc Nibble Mousse!

What you need :

75g/2¾oz milk 75g/2¾oz whipping cream 40g/1½oz egg yolks 20g/¾oz caster sugar 165g/6oz dark chocolate 200g/7oz whipping cream

How to make :

  • Heat 75g of milk and 75g cream

  • Whisk together egg yolks and sugar until light and pale in colour

  • Pour a small amount of the heated milk and cream onto the sugared yolks and whisk, then return back to the pan and heat on a low number until mix has thickened

  • Pour onto chocolate

  • Leave to cool

  • Whisk up egg whites to form soft peaks and fold into chocolate mix

  • Put a tablespoon of mix into cupcake mound

  • Add 3/4 Jammie Choc Nibbs

  • Top with more mousse and set in fridge or freezer
